We sent Strawberry Rhubarb to subscribers in May as an in-development flavor, and the feedback overall was incredibly positive. So we knew this one was worthy of a full launch. That said, subscriber feedback also pointed to a few ways we could make it even better before the release.
Our product dev team has been hard at work tweaking the recipe for its launch on August 22nd. And we’re pretty excited to share the final version with you. In short, they nailed that sweet and tart balance that makes strawberry rhubarb pie so unique. But if you’re curious, here are the biggest changes we made to the recipe from the in-development version:
Swapped the protein: The product dev team switched to a different pea protein that better complemented the flavor overall.
Reduced the oat quantity for a better texture: With the new protein, they had to reduce the oat quantity slightly to get the thickness just right.
Increased strawberry, rhubarb, and lemon: The team found that increasing these ingredients led to a better balance of fruit and tartness that makes the pie so iconic.
Increased sugar and salt: A little sugar was all it took to get the sweetness just right. And an extra pinch of salt helped to pull out more flavor overall.
